Say “Bueno!” Mexican Cornbread

1 ½ cup Corn meal

½ cup corn flour (or rice flour or soy bean flour)

2 Tbsp ground flaxseed

2 - 4 Tbsp sugar (to taste)

4 tsp baking powder

½ tsp salt

1 cup milk

1 Tbsp egg replacer dissolved in 3 Tbsp water (or 2 eggs)

¼ cup corn oil

1 can creamed corn (or 1 pkg. frozen corn)

¼ cup chopped pickled jalapenos

 ½ cup grated cheddar cheese

1 tsp chili powder

1 tbsp coconut oil

Preheat oven to 425°.  In a large bowl, combine corn meal, flour, flaxseed, sugar, baking powder, chili powder, and salt.  Add milk, egg replacer (or eggs), and oil.  Beat the batter until it is fairly smooth.  Fold in corn, jalapenos, and grated cheese.  Bake in an iron skillet, well greased with Coconut Oil for about 25 - 40 minutes, or until golden brown on top and toothpick inserted in center comes out clean.  “Butter” the top with coconut oil while it is still hot.

 

 

Orange-Cranberry Breakfast Cornbread

1 ½ cup Corn meal

½ tsp salt

1 cup orange juice and orange zest

1 Tbsp egg replacer mixed with 3 Tbsp water or 2 eggs

¼ cup corn oil

1 cup cranberries (fresh or frozen – well-chopped in a blender)

½ cup chopped pecans

1 tbsp coconut oil

Preheat oven to 425°.  In a large bowl, combine corn meal, flour, flaxseed, sugar, baking powder, and salt.  Add orange juice and zest, egg replacer (or eggs), and oil.  Beat the batter until it is fairly smooth.  Fold in cranberries and pecans.  Bake in an iron skillet, well greased with Coconut Oil for about 25 minutes, or until golden brown on top and toothpick inserted in center comes out clean.  Spread coconut oil over the top while it is still hot.
