Salads

 

Avocado Waldorf Salad

1 Avocado, sliced

2 stalks Celery, chopped

1 Apple, peeled & chopped

1/4 cup raisins or dates, chopped

1/4 cup Walnuts, chopped

1/4 cup Cilantro, Mint, or Basil, chopped

1 Tbsp Ginger, grated

1/2 Lime or Lemon juice

Olive Oil - to taste

Salt & Pepper

Mix chopped fruit, celery, nuts, avocado, ginger and chopped herb in a bowl.  Add Lemon or Lime Juice, Olive Oil, Salt & Pepper to taste.

 

Citrus & Sprouts

1 Grapefruit, sectioned

1 Orange

1/2 cup mixed fresh sprouts

1 Tsp Maple Syrup

Olive Oil - to taste

Salt & Pepper

Mix chopped fruit, celery, nuts, avocado, ginger and chopped herb in a bowl.  Add Lemon or Lime Juice, Olive Oil, Salt & Pepper to taste.

 

Coleslaw with Apricots

1 cup Purple or Green Cabbage, finely sliced

1 cup Carrot ribbons

1/4 cup apricots, chopped

1/4 cup Cilantro, Mint, or Basil, chopped

1 Tbsp Ginger, grated

1/2 Lime or Lemon juice

Olive Oil - to taste

1 tsp Sesame Oil

1 tsp Maple Syrup

Salt & Pepper

Black Sesame Seeds

Mix chopped cabbage, carrot ribbons, fruit, ginger and chopped herb in a bowl.  Add Lemon or Lime Juice, Olive Oil, Sesame Oil, Maple Syrup, Salt & Pepper to taste.  Garnish with Black Sesame Seeds.
